Bringing the bacon from Home

The girls and I are getting ready to load up another 6 pigs to take to Booyong, and then onto Pat at the Clune’s Butcher Shop to work his magic. We are so blessed to have such great facilities close by. We are even more blessed to have a butcher like Pat. Clunes Butcher shop is one of the best around. A combination of old style no nonsense (all it’s missing is some sawdust on the floor) and artisan craftsmanship.

We are really excited about some of the experiments Pat is doing on the bacon front. Here is a picture of Pat having a read of a recipe I printed out for Canadian Peameal bacon. I different take on bringing home the bacon. Thanks to Pat I am going to get to have a taste at the bacon from home I miss so much.
