Dry Aged Dexter Taste Testing

Alison and I got a call early yesterday morning from the Farm Gate Providor (Dan Hill) letting us know that the chef at Harvest Cafe was ready to slice off a few ribs from our Dry Aged Dexter. It did not take us long to make ourselves available. It’s hard to describe in words the taste experience so here are a couple of pictures for you. Thanks Chef Joseph Griffin for cooking up one of the finest bits of meat Alison and I have ever tasted–we never thought a bit of fresh squeezed lemon would be such a wonderful complement to rare beef.
