CHILLI LIME ROASTED CORN SALSA
- 2 Corn (corn on the cob, roasted on open flame for 5 minutes or until charred)
- 2 Serrano peppers (seeds removed, diced. I used 1 serrano and 1 fresno pepper.)
- 2 Lime (juice of two limes, about 2-3 tbsp)
- 1 small Bunch Cilantro (about a cup when chopped)
- 1 Red Onion (small diced, about 1 cup when diced)
- 1 Tomato (small diced, about 1/2 cup)
- 1/4 tsp Red Pepper Powder (or mild paprika, skip if you don't like spicy)
- 1 Pepperoncini (small diced, totally optional, but I love it in salsa)
- 1 tbsp Red Wine Vinegar
- 1 tsp Salt (adjust per taste) Serrano pepper
- 1 large cucumbers, peeled, seeded, roughly chopped
- 2 cups of chopped onions
- 1 red bell peppers, seeded and chopped
- 4 cups corn kernels (cut from 4-6 ears, depending on how big the ears are)
- 2 plum or Roma tomatoes, diced the size of a corn kernel
- 1 red or green serano chile peppers, seeded and minced
- 1 1/4 cups sugar
- 2 Tbsp Kosher salt
- 1/2 teaspoon black pepper
- 1 1/2 cups apple cider vinegar (5% acidity)
- 1/2 teaspoon turmeric
- 2 teaspoons mustard seeds
- 1/2 teaspoon ground cumin
