A quick, fresh and tasty cucumber and yoghurt salad that is very versatile. It goes with grilled fish, roast pork, grilled lamb chops and skewers – or swap out the dill for mint and serve alongside a curry.

Ingredients

  • 4 or 5 Lebanese cucumbers

  • 5 tablespoons Greek yoghurt

  • 2 tablespoons chopped dill

  • 1 clove garlic, peeled and grated or crushed

  • Olive oil

  • Half teaspoon ground dried chilli (optional)

  • Salt

Method

  • Spread the yoghurt over the bottom of a large plate.

  • Sprinkle the grated or crushed garlic over the yoghurt.

  • Cut the cucumbers in half widthways, then each piece halved lengthways, and each piece cut into three lengthways. Arrange them on top of the yoghurt.

  • Sprinkle with dill (and chilli if using) and a splash of olive oil. Season with salt.
